You’ve seen me posting a lot lately about avocados. I’ve been a little obsessed for a while and I don’t seem to be getting tired of these tasty little fruits. {Yes, it’s a fruit with a seed.} There are so many ways to enjoy them and I’ve shown you a dip, a guacamole recipe, a breakfast boat and today I am recommending that you add them to your summer grilling! They are amazing on your grilled burgers or chicken. Slice the avocado up and add it as a burger topping along with onions, tomato, cheese, sautéed green pepper slices…or whatever you can imagine! Load that all on a toasted bun, or for my keto friends, just do an open faced burger.

In just a 3.5 ounce serving of avocado you get:

  • Vitamin K: 26% of the daily value (DV)
  • Folate: 20% of the DV
  • Vitamin C: 17% of the DV
  • Potassium: 14% of the DV
  • Vitamin B5: 14% of the DV
  • Vitamin B6: 13% of the DV
  • Vitamin E: 10% of the DV
  • It also contains small amounts of magnesium, manganese, copper, iron, zinc, phosphorous and vitamins A, B1 (thiamine), B2 (riboflavin) and B3 (niacin).
